This was a really tasty sandwich, I love goat's cheese and with spinach and the sweetness of the croissant it worked perfectly. I love being able to eat hot sandwiches!
Spinach and Goat's Cheese Croissant
20g goat's cheese
Heat a frying pan and add the spinach and splash of water, cook until just wilted. Leave to cool and then squeeze out as much water as you can.
Halve the croissant and spread with the bottom half with goat's cheese, top with the spinach and then the other half of the croissant.
Put onto a panini press and cook until crispy. Serve.
