This is a massively unorthodox kasespaetzle! Usually it's just cheese and maybe the onions, but the sweetcorn is totally out of place, it comes from the garden and I thought why not, it was very tasty. I served it with bratwurst sausages, mustard, sauerkraut and green veg.
Kasespaetzle
(Serves 2)
100g spaetzle
1 onion, sliced
60g sweetcorn
60g emmental or gruyere cheese, grated
Bring a pan of water to the boil and cook the spaetzle according to packet instructions., adding the sweetcorn for the last 2-3 mins.
Whilst the spaetzle is cooking, hear a little oil in a pan and add the onion, cook until golden and caramelised, about 10-15 mins.
Add the spaetzle and sweet corn to the onion pan and stir a little to combine, sprinkle over the cheese and stir again. Serve.
