Summer Salad (adapted from Once Upon a Cutting Board)
(Serves 1)
1 small chicken
breasts, cooked and shredded
2 ears of fresh corn, shucked and cookedsalad greens
1/2 small avocado, peeled and diced
chunk cucumber, chopped
handful cherry tomatoes, halved
goat's cheese, crumbled
1 tortilla
balsamic vinaigrette
Heat the tortilla in a microwave for 10 secs. Chop into strips.
Toss all the salad ingredients together and top with goat's cheese. Pour over the vinaigrette and serve.
